Preheat the oven to 350 Combine all the ingredients, except the potatoes in
a bowl. Mix to a paste. Peel the potatoes. Cut a 1/2 inch wedge out of each
potato. Rub the space with spice paste. Reinsert the wedge and rub the
potatoes all over with the remaining spice. Place on a baking sheet and
bake for 30 - 40 minutes, turning every 10 minutes, until tender. Serve at
once.
1 ts Vegetable oil
1/2 ts Turmeric
pn Cayenne pepper
1/2 ts Garam Masala
1/4 ts Cumin, ground
Juice of 1/2 small lemon
1 tb Tomato paste
8 sm New potatoes
8 Servings
