Spiced Pineapple

Ingredients:
- 2 sm Pineapples
- 40 g Butter; melted
- 1 ts Cinnamon
- 2 tb Brown sugar
- Shredded rind of an orange
- 1/4 c Orange juice
- Icecream; to serve
- Extra orangre rind to
- -garnish
Instructions:
Peel and slice pineapples, and remove the cores using an apple corer. Place
slices into a non-metalic dish. Combine the remaining ingredients and pour
over the pineapple. Cover and refrigerate for 1 hour, longer if possible.
Barbecue or pan fry the pineapple slices over a moderate heat for 3-4
minutes or until pineapple slices are heated through. Serve pineapple
slices immediately with icecream and garnished with shredded orange rind.
