Spinach Chicken

Ingredients:
- 1 Onion; Chopped
- 2 Cloves Garlic; Minced
- 1 pk Spinach - Washed; (10 Oz)
- 1 ts Lemon Rind; Grated
- 1 ts Dried Mint Flakes
- 4 Chicken Breast; Skinless
- 1/4 c Old Cheddar Cheese; Grated
- 1 cn Cream Of Chicken Soup
Instructions:
Saute onion and garlic in lightly olied skillet - 5 minutes Stir in
spinach, lemon rind and mint, cook 2 minutes covered. Slice shicken
lengthwise (not all the way through) starting at the thick side. Stuff each
breast with 1 Tbsp. cheese Nestle chicken into spinach mixture with soup.
Simmer covered 20 to 25 minutes.
