Spinach Salad with Orange Dijon Vinaigrette

Ingredients:
- 3 tb Vegetable Oil
- 3 tb Orange Juice; Frozen
- -Concentrate
- 1 tb White Wine Vinegar
- 1 ts Dijon Mustard
- 1/4 ts Salt
- 1/4 ts Pepper
- 4 c Spinach Leaves Or Salad
- -Greens, Fresh, Torn
- 4 c Bibb Lettuce; Torn
- 2 c Mushroom; Sliced
Instructions:
In large bowl, whisk together oil, orange juice concentrate, 1 tablespoon
water, vinegar, mustard, salt and pepper. Just before serving, add spinach,
Bibb lettuce and mushrooms; toss to combine. Makes 4 servings. Per serving:
142 cals, 4 g pro, 11 g total fat, 10 g carb, 3 g fibre.
