Ajad (Fresh Cucumber Pickle)

Ingredients:
- 4 tb Rice vinegar
- 2 ts Sugar
- 1/2 ts Salt
- 1 oz Cucumber; finely chopped
- 2 sm Shallots; finely chopped
- 1 sm Carrot; finely chopped
- 1 sm Red or green chili
- -- finely chopped
Instructions:
Mix all ingredients in a small bowl, stirring well until thoroughly mixed
and serve.
