Welsh Gingerbread

Ingredients:
- 3 lb. flour
- 7 ts ground ginger
- 6 oz black treacle
- 1/4 pt milk
- 6 oz Demerara sugar
- 1/4 lb butter
- 2 oz minced peel
- 1/2 ts bicarbonate'soda
- 1 ts cream of tartar
- BARA SINSIR CYMREIG Sift the flour with the bicarbonate of soda and cream
- of tartar. Rub the butter into the flour and add the other dry ingredients.
- Add the treacle and milk. Mix well. Place in a greased tin and bake in a
- slow oven (300/F. or Mark 2) for 1 1/2 hours.

Title: Welsh Lamb Chops (Welsh)

Yield: 4 Servings
8 Welsh lamb chops 4 pt vinegar
salt and pepper 1 tb sugar
1 ts thyme 2 ts chopped mint
GOLWYTHON OEN CYMREIG Wash and score the fat on the chops to make it crisp.
Place in a meat tin and sprinkle with salt and pepper and thyme. Bake in a
hot oven, allowing 20 minutes per Ib. and 20 minutes cver. Begin at 425/F.
or Mark 7 and reduce to 400/F. or Mark 6 after 30 minutes. The Sauce:
Dissolve the sugar in the minimum of water and add with the mint to the
vinegar. Serve the lamb chops with new potatoes, peas and mint sauce.
