Zucchini-Crusted Pizza

Ingredients:

- 3 1/2 c Grated zucchini--; (grate it
- -coarsely)
- 3 Eggs; beaten
- 1/3 c Flour
- 1/2 c Grated mozzarella cheese
- 1/2 c Grated parmesan cheese
- 1 tb Fresh basil leaves;
- -minced--, (if you don't
- -have fresh, use 1/2
- -teaspoon dried)
- Salt and pepper
Instructions:
Salt zucchini lightly and let stand for 15 minutes. Squeeze out all excess
moisture.
Combine all crust ingredients. Spread into an oiled 9 x 13-inch baking pan.
Bake 20 to 25 minutes, until surface is dry and firm. Brush the top with
oil and broil it, under moderate heat, for 5 minutes.
Pile on all of your favorite toppings. Bake about 25 minutes.
