Orange Ginger Chicken

Ingredients:
- 2 lb Skinless chicken pieces
- 1 c Orange juice
- 1 tb Soy sauce
- 3 tb Sour apple jelly, or other
- -jelly
- 1/4 c Sliced ginger
- 1 tb Dijon mustard
- Salt and pepper to taste
- 2 Bell peppers, sliced
Instructions:

INSTRUCTIONS: Spray a non-stick skillet with cooking spray and heat over
medium-high heat until hot. Add chicken and brown on all sides. Remove
chicken from skillet and add all other ingredients except the bell pepper.
Bring to a boil, then return chicken to the skillet. Reduce heat, cover and
simmer chicken for 15 minutes. Add bell pepper and continue simmering for 5
more minutes.
Remove chicken and pepper to a platter. Thicken sauce, if desired, with a
little cornstarch dissolved in a small quantity of water. Pour sauce over
chicken and serve.
