Orange Gingerbread

Ingredients:
- 1/3 c Applesauce
- 1 c Dark molasses
- 1 1/4 c Orange juice
- 1 tb Finely grated orange rind
- 2 1/2 c Whole-wheat flour
- 1 ts Baking soda
- 1 ts Cinnamon
- 2 ts Ground ginger
- 1/2 ts Salt
- 1/2 c Raisins
Instructions:
Some time ago (I'm behind in my reading of ff digests!) a request was made
for a gingerbread recipe. Here's one that I use, slightly modified (to
remove the added oil) from a recipe from a February 1994 issue of
Vegetarian Times.
Preheat over to 350 degrees F. In a large bowl, mix together wet
ingredients. In a medium bowl, sift together dry ingredients. Add raisins.
Add dry ingredients to wet ingredients and mix well. Pour into a non-stick
9-inch by 13-inch pan and bake 40 minutes, making sure not to overbake.
Gingerbread will be moist.
