Eggless Mayonnaise

Ingredients:
- 10 1/2 oz Soft silken tofu
- 1 tb White vinegar
- 1 tb Fresh lemon juice
- 1/2 ts Dijon mustard
- 1 tb Vegetable oil
- 1 pn Salt
Instructions:
Process in a blender until smooth. Refrigerate overnight to allow the
flavors to develop.
This will keep for up to 2 weeks.
Makes 1 1/4 cups.
