Fresh Herb Garlic Dressing

Ingredients:
- 6 oz Lowfat silken tofu
- 1/4 c Freshly squeezed citrus
- -juice; combine orange lime
- -tangerine, etc or white
- -wine
- 1 tb Fresh herbs; chopped
- 2 tb Rice vinegar
- Extra virgin olive oil; to
- -taste *
- Salt and pepper
Instructions:
* Original was 2 tablespoons oil, but with the tofu and mild rice vinegar,
you only need enough oil to flavor the dressing.
Makes about a cup.
Blend all ingredients in blender. Adjust seasoning as necessary. Add water,
vegetable stock or wine to thin to your specifications. Let flavors marry
for 1 hour. Toss with salad.

NOTES : Use your own favorite herbs. Mix and match with any variety of
citrus fruits. Alter oil and vinegar ratio to suit your taste.
