Open-Faced Sesame-Pork Sandwiches

Ingredients:
- 1 Garlic Clove; Minced
- 8 oz Boned Pork Cutlets;
- -Tenderized
- 1 ts Sesame Seeds
- Vegetable Cooking Spray
- 1 c Sliced Fresh Mushrooms
- 1/2 c Thinly Sliced Onion
- 2 tb Mango Chutney
- 2 tb Dijon Mustard
- 1 Whole Wheat English Muffins;
- -Split And Toasted
Instructions:
Rub garlic over both sides of pork; sprinkle both sides evenly with sesame
seeds. Place a medium skillet coated with cooking spray over medium heat
until hot. Add pork; cook 4 minutes on each side or until done. Remove pork
from skillet; set aside, and keep warm. Wipe drippings from skillet with a
paper towel. Recoat pan with cooking spray; place over medium heat until
hot. Add mushrooms and onion; saute 3 minutes. Stir in chutney and mustard;
cook 30 seconds or until thoroughly heated. Place pork on English muffin
halves; top each with half of mushroom mixture.
