Vegetable Curry

Ingredients:
- 1 tb Vegetable oil
- 1 c Chopped onion
- 2 1/2 ts Curry powder
- 1 ts Ground cumin
- 1 pn Crushed dried red pepper
- 1 c Half and half
- 2 c Cubed peeled potatoes
- 2 c Chopped tomatoes
- 2 c Broccoli flowerets
- 2 c Carrot slices
- 4 c Hot cooked rice
- 1/4 c Fresh chopped cilantro
Instructions:
Heat oil in large nonstick skillet. Cook onion in oil until tender, about
10 minutes. Stir in curry, cumin and red pepper. Stir in half and half. Add
potatoes and 1 cup of the tomatoes. Cover and simmer 10 minutes, stirring
occasionally. Add broccoli and carrots. Cover and simmer about 7 minutes,
stirring occasionally. Season with salt and pepper. Serve over rice.
Sprinkle with remaining tomatoes and cilantro. Yield: 4 servings.
