Whipped Mashed Potato with Goat's Cheese And Bacon

Ingredients:
- 1 lb Potatoes
- Salt and freshly ground
- -black pepper
- 2 tb Extra virgin olive oil
- 6 oz Goat's cheese; softest
- -available
- 3 oz Lean bacon; finely diced
- 1 oz Butter
- 1 Clove garlic; peeled and
- -crushed
- 2 tb Snipped chives
Instructions:
1 Cook the potatoes in boiling salted water, drain and return to the pan on
a low heat. Mash to a puree. Heat the butter in a frying pan, add the
bacon, garlic and chives, and cook with the bacon till crisp.
2 Add the olive oil and goat's cheese to the pureed potatoes and, using a
wooden spoon, beat until light and fluffy. Season with salt and pepper, mix
in the bacon mixture and serve.
