Clean carrots, cover with ice in a bowl and refrigerate for 1/2 hour. Grate
carrots into a bowl and add raisins, (nuts if desired) lemon juice and sour
cream. Mix well and serve on a lettuce leaf.
N: If using sour cream or yogurt, you may prefer a sprinkling of sugar into
the mix.

1/2 c Raisins
1/2 ts Salt
1 tb Lemon juice
1 c Sour cream; mayonnaise or
-vo2urt-or any combination
7 1/3 c Chopped pecans; almonds or
-roasted peanuts, optional
