Carrot Salad (Emeril)

- 1 c Grated carrots
- 1/2 c Water
- 1 ts White vinegar
- Pinch of salt
- 1 ts Sugar
- 5 tb Nouc Cham; ( from the recipe

Instructions:
In a bowl combine all the ingredients. Serve with spring rolls. Yield:
about 1 1/2 cups.
