Carrot Salad with Cumin

Ingredients:
- 1 lb Carrots; peeled and grated
- 1/2 c Chopped Italian parsley
- 1 tb Fresh lemon juice
- 1 tb Olive oil
- 1 Clove garlic; minced
- 1/2 ts Ground cumin
- Salt and black pepper to
- -taste
Instructions:
Toss all ingredients. Serve within 1 hour.
