Amaranth Date Nut Bread

Ingredients:
- 1 c Chopped dates
- 1/2 c Amaranth
- 1 c Boiling water
- 2 Eggs
- 1/2 c Honey
- 1/4 c Butter, melted
- 2 c Whole wheat flour
- 2 ts Baking powder
- 1 c Chopped pecans
- 1 ts Vanilla extract
Instructions:
Soak dates and amaranth in boiling water. Beat eggs well, add honey and
butter; beat well. Stir in all remaining ingredients mixing well. Pour
into an oiled loaf pan. Bake at 350 F for 1 hour and 15 min.
