Chicken in Lime

Ingredients:
- 1 lb Skinless chicken breasts --
- About 3
- 1 c Chopped onion
- 1 Garlic clove -- minced
- 1/2 ts Ground cumin
- 1/2 ts Crushed coriander seed
- 1/4 ts Tumeric
- 1/8 ts Cayenne pepper
- 2 tb Soy sauce, low sodium
- 2 Limes
Instructions:
Trim all visible fat from chicken breasts. Heat a non-stick skillet over
medium heat until hot. Away from the heat, coat with cooking spray. Add
breasts, onion, and garlic. Saut=E9= until breasts are browned, about 8
minutes, turning once. Add seasonings and soy sauce. Reduce heat; cover;
cook until chicken is fork tender and no longer pink, about 15-20 minutes.
Cut one lime in quarters; halve the other. Place chicken on serving dish;
top with the sauce from the pan; sprinkle with juice from the halved lime
(about 2 Tbsps). Serve with the lime quarters.
