Crawfish Fritters

Ingredients:
- 1 c Crawfish tails
- 1/4 c Pimientos -- chopped
- 1/4 c Green onions -- chopped
- 2 c Flour
- 1 ts Baking soda
- 1/2 ts Salt
- 1/2 ts Liquid crab boil
- 1/2 c Broth or water
- Oil for frying
Instructions:
Add pimientos and green onions to crawfish. Sift flour, baking soda and
salt together and add to crawfish. Add broth or water and mix to make a
thick batter. Cover and let rest for 1/2 hour. Heat oil. Drop batter by
spoonsful and fry until golden brown. (wrv)
