1. Sauté crawfish tails in butter. Season with garlic, salt and white
pepper to taste.
2. Place on bread which has been spread with remoulade dressing. Top with
cheese.
3. Pan Sauté sandwich, as if a grilled cheese sandwich, in a skillet or on
the grill.
4. Place in the oven for 1 to 2 minutes. Garnish with sweet potato chips.
