Creamy Slaw

Ingredients:
- 1/2 c Low-fat buttermilk
- 2 tb Chopped fresh -or-
- 2 ts Freeze-dried chives
- 2 tb Low-fat sour cream
- 2 tb Lemon juice
- 1 ts Caraway seed
- 1/2 ts Salt
- 1/4 ts Pepper
- 3 c Finely shredded green
- -cabbage (about 1/2 large
- -head)
- 1 c Shredded carrot (about 1
- -large)
- 1/2 c Finely chopped green onions
- -(about 5 medium)

Mix buttermilk, chives, sour cream, lemon juice, caraway seed, salt and
pepper in large glass or plastic bowl. Add cabbage, carrot and onions;
toss. Cover and refrigerate about 2 hours or until chilled. 6 servings
Variation: CREAMY JICAMA SLAW: Omit caraway seed. Substitute 1 cup shredded
jicama for 1 cup of the shredded cabbage.
