Put chicken, ginger, salt, pepper & frozen orange juice in slow-cooking
crockpot and cook on low 6 hours. Serve chicken on hot cooked rice on
platter. Top with coconut, orange segments and green onions. Serve chicken
liquid in gravy boat, if desired.
This is quite good.
6 Skinless Boneless Chicken
-Breasts
1/2 ts Ginger
1 ts Salt
Pepper
8 oz Orange Juice, From Frozen
-Concentrate
1 1/2 c Coconut; Shredded
2 c Mandarin Oranges; Segments
Or fresh orange segments
2 Green onions; chopped
Cooked rice; hot
