Dry Salami and Mushroom Bolognese

Ingredients:
- 8 oz Sliced Monterey Mushrooms
- 4 oz Sliced Dry Salami; (minced)
- 1 Yellow onion; (chopped)
- 3 Cloves garlic; (minced)
- 1 bn Italian parsley; (chopped)
- 2 tb Fresh oregano; (chopped)
- 1/4 c Red wine
- 2 tb Olive oil
- 2 ts Salt
- 2 tb Black pepper
- 1/4 ts Dried crushed red chilies
- 1 cn (12 Oz.) crushed tomatoes
Instructions:
In a blender place mushrooms, salami and next four ingredients. Blend till
finely chopped. Heat oil in large sauté pan and add mushroom mixture. Sauté
for 5 minutes or until liquids are gone. Deglaze pan with red wine and
reduce out. Add remaining ingredients; cook for 10 minutes. Pour over your
favorite pasta and enjoy. Serves 4
