Saute rice in oil with garlic and onions until brown; stirring
continuously. Add the rest of the ingredients. Pour into a greased baking
dish and bake at 400 degrees for 45 minutes covered and an additional 10-15
minutes uncovered. Any seafood such as shrimp, mussels or squid can be

3 tb Oil
3 Cloves garlic; minced
1 md Onion; chopped
2 c Chicken broth
2 c De-boned chicken; cooked and
-cut up
1/4 ts Saffron
2 tb Capers
1 sm Canned peas
1 Tomato; chopped
Salt; to taste
