Eggplant Casserole

Ingredients:
- 1 Eggplant, cubed, unpeeled
- -(approx. 3 cups)
- 3 oz Grated American cheese
- -(low-fat)
- Salt and pepper to taste
- 1 tb Margarine recommended
- 1/3 c Water
Instructions:

Stir together eggplant and cheese. Add salt, pepper, margarine and water.
Mix well. Place mixture in casserole and bake at 350 degrees for 35-45
minutes in oven. Serves 3-4.
Per serving: 105 calories; 5.5 g fat (1.7 g saturated fat; 47 percent
calories from fat); 4 mg cholesterol; 470 mg sodium.
