Furmenty

Ingredients:
- 1 c Cracked wheat
- 1 qt Water
- 3/4 c Milk
- 1/2 c Heavy cream
- 1/2 ts Salt
- 1/8 ts Mace
- 1/2 ts Ground cinnamon
- 1/4 c Brown sugar
- 2 Egg yolks
- Additional brown sugar
Instructions:
In a large pot, bring the water to a boil and add the wheat. Lower heat to
simmer, cover and continue to cook for 1/2 hour or until soft. Drain and
add all but eggs. Continue to simmer, stirring occasionally until most of
the liquid is absorbed (20-30 minutes). In a small bowl beat the egg yolks
and stir in 1/2 cup of the wheat mixture. Then, stir the yolk mixture into
the pot and cook for five more minutes, stiffing frequently. Serve with
extra brown sugar.
