5-Bean Soup

Ingredients:
- 2 tb EDEN Extra Virgin Olive Oil
- 4 Cloves garlic; minced
- 1 md Onion; diced
- 3 Celery stalks; diced
- 2 Carrots; diced
- 1 md Potato; diced
- 1/4 c Barley
- 4 c Water
- 1 Bay leaf
- 15 oz Can EDEN Pinto Beans
- 15 oz Can EDEN Black Beans
- Can EDEN Kidney Beans
- Can EDEN Navy Beans
- Can EDEN Aduki Beans
- 1 c Corn, fresh or frozen
- 2 c EDEN Spaghetti Sauce
- 1/4 c EDEN Shoyu
- - (or more, to taste)
- 1 ts Dried oregano
- 1 ts Dried basil
Instructions:
Heat oil and saute garlic and onion until onion is translucent. Add
celery, carrots, potato, barley and water. Simmer 30 minutes. Add beans,
corn, spaghetti sauce, shoyu, and herbs. Simmer 5-10 minutes. Serve.
