Greek Spinach Salad

1/4 c Vegetable oil
2 tb Lemon juice
1/2 ts Sugar
1 1/2 ts Dijon mustard
1/4 ts Salt
1/8 ts Pepper

Instructions:

8 c Bite-size pieces spinach
1/2 c Feta cheese; crumbled
24 Pitted ripe olives
3 md Tomatoes; cut into
-wedges
1 Cucumber; sliced
1 Green onion; sliced

Prepare Lemon Dressing. Shake all ingredients in tightly covered container.
Toss dressing and remaining ingredients.
