Italian Chicken and Potato Packets

Ingredients:
- 2 tb Olive oil
- 1/2 ts Italian seasoning
- 1/4 ts Garlic salt, paprika
- 4 Chicken breasts; bone-in
- 1/2 c Parmesan cheese; grated
- 2 md Baking potatoes; unpeeled,
- -large strips
Instructions:
1. In small bowl, blend oil, Italian seasonings, garlic salt and paprika.
2. Place chicken breast in centre of each of four 18"x12" pieces of foil.
Sprinkle each with 1 tbsp of cheese and top with potato strips. Drizzle
oil mixture over top and spinkle with remaining cheese. Wrap securely.
3. Place packets seam-side up on cookie sheet. Bake at 400F for 45-55
mins until cooked through. (If grilling, cook seam-side down 4-6" from
med-high heat for 40-50 mins, turning once turing cooking)
Open packets carefully, allowing steam to escape.
Var - use mozzarella in place of parmesan, or yams in place of baking
potatoes.
