Ingredients:
- 1 1/4 c Flour
- 3/4 c Sugar; divided
- 1/2 ts Cinnamon
- 1/2 c Cold sweet butter; in small
- -pieces
- 1 Egg; separated
- 1/2 c Sliced unblanched almonds
Instructions:
Heat oven to 350F. In large bowl combine flour, 1/2 c sugar, and cinnamon.
Cut in butter; work mixture with fingertips til small crumbs form. Add yolk
and work in til well blended; shape dough into ball. Press evenly into
well-greased 13X9X2" metal baking pan. Brush with slightly beaten egg
white; sprinkle with remaining 1/4 c sugar and the almonds, pressing them
into the dough. Bake 18-20 minutes or til lightly browned. Cool a few
minutes, then, using a cleaver and pressing down firmly, cut into 2X1"
bars. Finish cooling in pan on rack before taking from pan. Per cookie: 43
