Judy's Banana Rum Coconut Tart

Ingredients:
- 5 oz Pkg
- Grated)
- 4 1/2 oz Granulated Sugar
- 4 1/2 oz Butter
- 3 Eggs
- 1/4 c Pastry cream
- 1 Ripe
- 1 Capful
- 1 Pate Sablee or Pate Brisee
- Tart shell
- Powdered Sugar -- for
- Garnish
- Grated coconut -- (or fresh
- Mashed banana
- Dark rum
Instructions:
Method: Cream butter in mixing bowl. Add sugar & coconut. Mix in eggs
one at a time. Add pastry cream, bananas & mix. Add rum & mix. Pour into
Pate Sablee or Pate Brisee tart shell and bake at 350 for 30-35 min, or
until done. Let cool & dust with powdered sugar.
