Baked Catfish Parmesan #2

Ingredients:
- 6 Skinned catfish filets
- 1 c Dry bread crumbs (plain;
- -whole wheat or Italian)
- 3/4 c Grated Parmesan cheese
- 1/4 c Chopped parsley
- 1 ts Paprika
- 1/2 ts Oregano
- 1/4 ts Basil
- 2 ts Salt
- 1/2 ts Pepper
- 1/3 c Butter or margarine; melted
- Lemon wedges
- Parsley
Instructions:
Clean, wash and pat fish dry. Combine bread crumbs, Parmesan cheese,
parsley, paprika, oregano, basil, salt and pepper. Dip catfish in melted
butter and roll in crumb mixture. Arrange fish in a well greased 9x13
baking dish. Bake at 375ø for about 30 minutes or until fish flakes easily
when tested with a fork. Garnish with lemon wedges and parsley. Yield: 6
servings.
