Preheat oven to 300 degrees. Grease a 13" x 9" pan. Cream sugar,
butter and egg until fluffy; add orange peel. Combine flour, salt and
baking powder with liquid; pour into pan. For topping, beat egg
whites until very stiff. Add sugar and beat until very stiff. Fold
in coconut, spread over batter. Bake 30-40 minutes. Cool and cut into
squares.

4 tb Butter, softened
1 Egg
1 Orange, grated peel of
1 1/2 c Flour
1/4 ts Salt
1 1/2 ts Baking powder
1/2 c Fresh orange juice
1/4 c Milk

3/4 c Sugar
1/2 c Coconut, shredded
