1.Steam lobster for 15 minutes or use canned lobster and heat through.
2.In a double boiler melt the butter. Add paprika, sherry and lobster.
3.After stirring, fold in flour.
4.Beat egg yolks with cream in a bowl then fold in the mixture from the
double boiler. Stir until blended.
5.Add shredded cheese.
Serve in puff pastry shells or on toast with fresh steamed broccoli.
