Minted Pasta Salad

Ingredients:
- 2 c Small pasta shapes, such as
- Orzo, tiny shells or ziti
- Salt
- 1/3 c Light olive oil
- 2 tb Red wine vinegar
- 1/2 c Fresh mint leaves, chopped
- 1 ts Fresh oregano leaves,
- Chopped
- 2 Cloves garlic, minced
- Freshly ground pepper to
- Taste
Instructions:
Cook pasta in boiling salted water according to pack directions until
al dente; drain well. Mix oil, vinegar, herbs, garlic, salt & pepper
in a serving bowl. Add pasta & toss gently. Serve warm or at room
temperature.
