Roll pork out thin. Wrap roast with pork. Refrigerate overnight or
10-12 hours. Heat oven to 300. Remove & discard pork. Rub thoroughly
with mustard. Season with salt & pepper. Place in roaster. Surround
with vegetables. Pour tomatoes over. Cover & bake 2 hours.
1 lb Salt pork
4 lb Rump moose roast
1 tb Dry mustard
2 ts Salt
1 ts Pepper
2 Sliced onions
2 Chopped carrots
2 Chopped celery stalks
2 c Tomatoes (seeded, chopped &
Strained)
