Mozarella, Zucchini and Anchovy Toasts

Ingredients:
- 1 tb Olive oil
- 4 sm Zucchini, trimmed and sliced
- 2 tb Parsley, finely chopped
- 4 sl (large) fresh Italian
- -country bread, 3/4 inch
- -thick
- 12 sl Mozzarella cheese
- 8 Anchovy fillets, drained and
- -chopped
Instructions:
Preheat oven to 400F. Heat olive oil in large skillet over med-high heat.
Add zucchini and parsley and saute' until zucchini is tender, about 5 min.
Remove from heat. Place bread slices on large baking sheet. Bake until
crisp, about 10 min. Arrange 3 slices mozzarella on each bread slice. Top
with zucchini, dividing equally. Sprinkle with anchovies. Return to oven
and bake until cheese melts, about 5 min. Serve hot.
