Nan's Lemon Curd Cheese

Ingredients:
- 1/2 c Butter
- 2 c Sugar
- 3 lg Eggs; beaten
- 2 Lemons; juice only
Instructions:
Melt butter and sugar in double boiler. Add eggs and juice and cook,
stirring until thickened. Put in jars and cool. Keeps for months in fridge.
