Nut Filling

Ingredients:
- 1 1/2 lb BUTTER PRINT SURE
- 1 lb FLOUR GEN PURPOSE 10LB
- 1 lb NUTS MIX SHELL #10
- 1 1/2 lb SUGAR; GRANULATED 10 LB
- 1 1/2 lb SUGAR; BROWN, 2 LB
- 1/2 oz CINNAMON GROUND 1 LB CN
Instructions:
1. SIFT TOGETHER FLOUR AND CINNAMON IN MIXER BOWL; BLEND IN SUGARS.
2. ADD BUTTER OR MARGARINE TO DRY INGREDIENTS; MIX AT LOW SPEED
UNIL WELL BLENDED.
3. BLEND IN NUTS AT LOW SPEED.
NOTE: THIS FILLING MAY BE USED IN A VARIETY OF SWEET DOUGH PRODUCTS.
USE 2 TBSP FILLING FOR EACH PASTRY. SEE RECIPE NO. D-G-7, GUIDE FOR
SWEET DOUGH MAKE-UP.
