Orange and Pear Salad

Ingredients:
- 4 Navel oranges, peeled, cored
- And diced
- 2 Ripe pears, cored anddiced
- 12 c Minced green onion
- 14 c Julienned fresh basil
- 1/2 Julienned fresh mint
- 1 bn Fresh watercress, arugula or
- Spinach leaves
- Sweet Sesame Orange Dressing
- (recipe follows)
Instructions:
Toss salad ingredients with dressing. Makes 6 side-dish servings.
STREET SESAME ORANGE DRESSING: Whisk together sesame oil, 2 tablespoons
minced shallot, 1 teaspoon minced garlic, 2 tablespoons orange marmalade, 1
tablespoon cider vinegar, 1/2 teaspoon salt and 1/2 teaspoon black pepper.
Whisk in 2 tablespoons hot water and set aside to combine flavors. Makes
1/2 cup.
