Orzo with Spinach and Feta Cheese

Ingredients:
- 1 c Orzo pasta
- 1 1/4 ts Olive oil
- 3/4 md Onion; minced
- 7 oz Frozen chopped spinach;
- -thawed and well drained
- 2 tb Feta cheese; plus 2 tsp.
- -,crumbled
- Freshly ground black pepper;
- -to taste
Instructions:
Cook the orzo according to package directions. Drain. Heat the oil in a
skillet over medium high heat. Add the onion and saut‚ for 5 minutes. Add
the spinach and saut‚ for 4 more minutes. Toss the onion spinach mixture
with the hot orzo. Add the feta cheese and ground pepper and toss well.
Serve immediately.

17mg, protein 7.7g, carbohydrates 23.8g, fiber 2.5g, sodium 256mg.
