Saute' vegetables and seasonings in olive oil. Stir rice and vegetables
into a rectangular casserole dish, and pour water on top. Bake at 400 F.
for 45 minutes; remove and sprinkle with cheese and olives; cover and
return to oven for an additional 10 minutes.
1/4 c Olive oil
1 md Onion; chopped
4 Garlic cloves; minced
2 Tomatoes; chopped
6 Mushrooms; sliced
2 tb Parsley; chopped
1/2 ts Oregano
1/2 ts Basil
2 c Quick Brown Rice
4 c Water
Salt and pepper to taste
1/2 c Parmesan cheese
1/4 c Olives, sliced
