Heat butter and milk until butter is melted. Beat into potato puree. Beat
in egg yolks and seasoning. Beat whites until stiff and fold in. Turn
mixture into buttered 1 1/2 quart baking dish. Sprinkle with cheese. Bake
at 350° for 30-40 minutes until puffed and golden.
