Red Cabbage and Apples

Ingredients:
- 2 lb Red cabbage, finely shredded
- 8 Juniper berries, crushed
- 1/4 pt Boiling water
- 1 ts Salt
- 8 oz Onions, chopped
- 8 oz Apples, chopped
- 2 oz Soft brown sugar
- 1 ts Caraway seeds
- 1 Bag bouquet garni
- 1 tb Cornstarch
- 3 tb Malt vinegar
- 1 tb Cold water
Instructions:
Place red cabbage, junipers, 1/4 c boiling water & salt in a large
pot. Bring to the boil, cover & simmer for 30 minutes. Stir in
remaining water, onions, apples,sugar, caraway seeds & bouquet garni.
Cover & cook gently for 1 1/2 hours, stirring frequently.
Remove bouquet garni. Blend cornstarch with the vinegar & cold water
till smooth. Stir into the cabbage & cook uncovered for 10 minutes.
Stir often to prevent sticking.
