Scallops, Grilled in Lime Marinade

Ingredients:
- 1/2 c Fresh lime juice
- 1 tb Soy sauce, low sodium
- 1 ts Dried oregano
- 1 ts Black peppercorns --
- Cracked
- 4 dr Tabasco sauce
- 3 lb Sea scallops
- 1/2 lb Bacon -- thinly sliced
- Cooked
Instructions:
Combine lime juice,soy sauce, oregano, pepper and Tabasco in a large bowl.
Add scallops and marinate in refrigerator for 1 hour.
Spray metal skewers with cooking spray. Drain scallops and reserve liquid.
Wrap each scallop in partially cooked bacon and thread onto skewers. Leave
room between each scallop.
Grill on moderate-high heat or broil in oven. Turn skewers often and baste
with reserved marinade. Cook 4-5 minutes. Scallops should be slightly
springy to the touch.
Scallops can be arranged on a platter and passed as an appetized or served
on individual plates as a first course.
