Category: Hawaiian, Healthy Recipes, Quick & Easy, Main Dish, Fish, Mexican

 Ingredients List

  • 1 8 oz can whole or crushed pineapple
  • juice from 1 lime (or approx. 1/2 cup lime juice)
  • 1 tablespoon salt
  • 1 tablespoon fresh oregano, chopped
  • 6 garlic cloves, chopped
  • 1 teaspoon fresh ground pepper
  • 1 pound fresh fish, preferably Mahi Mahi (tuna or cod can also be used)
  • 8 (6-inch) tortillas, warmed up
  • 1 tablespoon chopped cilantro
  • 2 tablespoons chopped yellow onion
  • salsa

 Directions

Open the can of pineapple and separate the fruit from the juice.

Mix the lime juice, pineapple juice, salt, oregano, garlic and pepper together.

Pour the lime-pineapple juice mixture over the Mahi Mahi and let it marinate for approximately 2 hours.

Remove the Mahi Mahi from the marinade. Grill or saute the fish. Once done, take it out of the grill and cut it into 1/4-inch cubes.

Place the fish in the tortillas and garnish with the canned pineapple fruit (chopped), cilantro, onion and salsa.

Serve warm with a slice of lime.
