Tomato and Avocado Sandwich.

 Ingredients List

  • 1 medium avocado (ensure it is ripe)
  • 2 slices of fresh bread (I used a fresh sour-dough from a specialist baker)
  • 2 tomatoes (mine are from the front garden :P )
  • salt & pepper (preferably in grinder form)
  • olive oil & balsamic vinegar

 Directions

1. Toast bread in pan with a light smearing of olive oil. Allow bread to cool whilst you prepare the avocado and tomato.

2. Mash avocado to a chunky paste (choose your own consistency, the back of a fork works well for mashing)

3. Slice the tomato with a sharp knife (don”™t squish them!)

4. Put mashed avocado on toasted bread (nice and thick please!)

5. Make a combed surface in the avocado and drizzle with little balsamic vinegar (don”™t overdo it; just make sure there is a little balsamic all over the avocado.)

6. Pack on the sliced tomato and give a liberal helping of salt and pepper
