Lamb Tacos with Tzatziki Sauce

 Ingredients List

  • 1 tbsp olive oil
  • 1 tablespoon minced garlic
  • 1 onion, diced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1 pound ground lamb
  • 1/2 tsp salt or Greek all-purpose seasoning (optional)
  • Juice of 2 lemons, separated
  • 1 cup plain Greek yogurt (whole milk or low fat)
  • 1/4 cup sour cream
  • 1/2 cup 1/4-inch diced cucumber
  • 1 teaspoon Champagne vinegar or white wine vinegar
  • 1 teaspoon olive oil
  • 1 teaspoons minced garlic
  • 1 teaspoons minced fresh dill
  • Pinch freshly ground black pepper
  • 1/2 head iceberg lettuce
  • 1/2 cup shredded cheddar or crumbled feta cheese
  • Kosher salt and freshly ground black pepper to taste
  • 1 package small corn or flour tortillas, heated up on grill or in oven

 Directions

Try this taco version for a more appetizing and tasty alternative to the traditional Mexican dish.

Directions:

In a large skillet coated lightly with oil, sautee the garlic and onion until lightly caramelized.

Add in the lamb, season with cumin, paprika, Greek seasoning or salt, and cook through, about 5 minutes. Fold in lemon juice (from 1 lemon) and check for flavor.

In the meantime, prepare the tsatziki sauce by mixing the yogurt with the sour cream, cucumber, vinegar, olive oil, garlic, dill and lemon juice (from 1 lemon). Season with salt and pepper, to taste.

Warm tortillas, shred the lettuce, assemble the tacos with tzatziki, lettuce and cheese on top.
