Category: Thanksgiving, Vegetarian, Beens, Holiday, Quick & Easy, Side Dishes, Crockpot

 Ingredients List

  • 4-6 bacon slices
  • 1 1/2 cups chopped onion
  • 6 15- to 16-ounce cans Great Northern beans, drained
  • 1 1/4 cups purchased barbecue sauce
  • 3/4 cup dark beer
  • 1/4 cup light molasses
  • 3 tablespoons Dijon mustard
  • 3 tablespoons (packed) dark brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons minced canned chipotle chilies
  • 1 teaspoon chopped fresh parsley

 Directions

1. Cook bacon in large skillet over medium heat until crisp. Transfer to paper towels and drain.

2. Using the same skillet, saute the onions a little in some of the bacon fat so they are not crunchy and raw.

3. Add the beans and the rest of the ingredients to the crockpot. Add in the cooked onions and stir to blend all the ingredients.

4. Finely chop the bacon; add to the crockpot.

5. Cover and cook for about 4 hour. Allow to cool 10 minutes before serving.
